As I've mentioned before on my Eight 20: Fitness Plan post way back in 2013, I've literally tried every diet under the sun. It wasn't until I'd decided for the last time I was going to change the way I thought about food and start to eat the right stuff. In a four part sequel I'm going to talk you through some of my favourite healthy easy meals to make at work, starting with the most important meal of the day: breakfast.
Salmon, Avocado & Egg White Scrambled Egg: understandably microwaved eggs aren't the tastiest, but nevertheless egg whites are low in saturated fat and high in protein. Avocado as we've all probably read are the super foods for living well, holding more potassium than a banana, avocado's have been proven to prevent cancer, help arthritis and to loose weight.
Overnight Oats: if you've not got time at work to prepare anything, why not make your oats the night before. Simply blend oats, soya milk, honey with a choice of your favourite fruit, leave in a sealed jam jar overnight to eat on the move the following morning. Be sure to give it a shake before you tuck in, mixtures can sometimes separate depending on what fruit you've mixed.
Protein Pancakes: the yummiest, most tastiest breakfast you'll ever take to work! Make the night before, wrap in foil and indulge at work the following morning. Wrap the pancake with honey and fruit to enjoy at your desk, you can find the full recipe for low fat banana protein pancakes here.
