HEALTHY AND TASTY LUNCHTIME RECIPE: BAKED EGGS


As you know I love to eat clean and train hard most of the time, but by 'eating clean' this doesn't mean to say you've got to eat raw tasteless veg and bland chicken. Eating clean means making something yourself, without the use of jars and microwavable sauces. So let me introduce you to the world of baked eggs... Trust me, you'll thank me later!

You'll need:
x2 Large Eggs
Chorizo
x1 Tin of Chopped Tomatoes
Peppers
White Onion
JalapeƱos
Spinach
Oregano
Paprika
Garlic Powder

Firstly chop the peppers, onions, chorizo and JalapeƱos into even chunks. Bring a frying pan to heat and add in Flora's 1 Kcal Spray. Once the pan is hot add all the veg and cook until slightly brown. 

Add in the chopped tomatoes and fresh spinach along with a sprinkling of oregano, paprika and garlic powder, cook for a furher few minutes.

Now push all the ingredients to the sides of the pan, creating a doughnut type hole in the middle. Crack both the eggs and place inside, leave for three minutes.

Once the eggs are slightly white, take the pan off the hob and place under the grill to further cook the inside of the egg. Leave for a further three-four minutes (depending on the grill temperate) then serve once eggs are cooked throughout. 

A quick, healthy and super tasty meal cooked in under 20 minutes - what more could you ask for!
